Chocolate and Banana Cupcakes


Last Friday i noticed that the bananas i had in my kitchen were starting to go bad and before throwing them away i thought it'd be better if i did something with them so i decided to make cupcakes! I looked on the Internet for banana cupcakes and stumbled upon this amazing recipe in joyofbaking.com so thank for really amazing cupcakes !





We will be making firstly the actual cupcakes and later on the frosting that goes on top of them.

For the cupcakes you will need:

-200 grams of white sugar
-130 grams of flour
-35 grams of cocoa powder
-3 grams of baking powder
-3 grams of baking soda
-2 grams of salt
-An egg
-A banana
-120 ml of warm water
-60 ml of milk
-60 ml of vegetable oil
-4 ml of vanilla extract



For the chocolate frosting you will need:

-90 grams of chocolate
-113 grams of unsalted butter
-120 grams of icing sugar
-5 ml of vanilla extract



Now that we've got all the ingredients let's get started!

First you will need to preheat your oven to 175 degrees C. One thing that makes this recipe so easy is that all you really have to do is separate dry and wet ingredients. In a bowl mix all the dry ingredients (sugar, flour, cocoa powder, baking powder, baking soda and salt) and whisk them all together. Then do the same with the wet ingredients (egg, mashed banana,water, milk, oil and vanilla extract) in another bowl.
Then you'll want to mix both dry and wet ingredients together and once you've done that you will need to pour the batter onto the cupcake paper liners. Make sure you don't fill them all the way to the top because if you do when you put them in the oven the batter will get out of the paper liner.
Next put them in the oven and let them cook for about 20 minutes.

While the cupcakes are in the oven, work on the frosting. For this you will need to melt the chocolate and you can do this by placing a heatproof bowl over a sauce pan of simmering water or melting it in the microwave being careful for it not to get burnt. Next, in the electric mixer you'll want to beat the butter until it is smooth and creamy, then add the sugar and beat that, Add the vanilla extract and the chocolate and beat until it is smooth and glossy.

When the cupcakes are done you will need to take them out of the oven and let them cool for a while. Once they have cooled down it's time to decorate them putting the frosting on top of them, i did this by using a pastry bag and i tried to make them have a cute little design on top.

And that's it, you are done, you've successfully baked 12 sweet and yummy cupcakes, mine aren't even close to being the best good looking ones but i can assure you they did taste wonderful !
